Honey Cake

Ingredients:

  • 170 g runny honey
  • 140 g butter
  • 2 eggs, beaten
  • 85g mucavado sugar
  • 200 g self-raising flour, sieved

Method:

  1. Pre heat oven to 180C/350F/Gas 3,
  2. Butter and line a 6- 8in/15-20cm circular cake tin.
  3. Measure the honey, butter and sugar in to a large pan.
  4. Add a tablespoon of water and heat gently until melted.
  5. Remove from the heat and allow to cool then mix in the eggs and flour.
  6. Spoon into the cake tin and bake for 40-45 mins until the cake is springy to the touch and shrinking slightly from the sides of the tin.
  7. Cool slightly in the tin before turning onto a wire rack.
